Dairy Free Cream of Mushroom Soup
Ingredients:
2 onions finely chopped
2 tablespoons of olive oil
350g mushrooms
1 tablespoon paprika (optional)
1 teaspoon cayenne pepper - (optional)
600ml vegetable stock
Pinch of salt
225g Tofu
1 tablespoon vegetable oil
2 teaspoons lemon juice

How to cook:
1. Heat olive oil in a pan then add the onion and saute for 5mins.
2. Chop and add the mushrooms together with the paprika and cayenne and stir to blend. Reduce the heat and continue to cook gently for 10mins.
3. Stir in stock, salt and pepper, bring to the boil and simmer for a further 5mins.
4. Meanwhile place the tofu, vegetable oil and lemon juice in a processor and blend till smooth.
5. Stir the mixture into the saucepan and heat gently without allowing it to boil. Taste to adjust seasoning if necessary. Serve immediately
